I don't know if this is your kind of thing, but check out the National Outdoor Leadership School courses in sea kayaking in the Sea of Cortez or the Outward Bound surfing courses in Costa Rica.  You get to not only have a two week trip to paradise but also learn a outdoor skill.

If something less strenuous is what you're looking for and you don't want to spend time on the Love Boat,  there are a lot of sailing opportunities out of the British Virgin Islands.  Everything from chartering your own boat to learning ocean sailing on an instructional cruise.

I don't have any particular locations to suggest(don't travel abroad), but if you're headed to the gulf, be sure to keep an eye on forecasts and such.  Wouldn't be much fun to show up to a tropical storm or hurricane.
